
Marinated Lebanese chicken skewers with garlic, lemon, and yogurt — grilled until juicy with beautiful char marks.

Equipment needed

Cut chicken into 3cm cubes.
Whisk yogurt with garlic, lemon juice, tomato paste, paprika, cumin, olive oil, salt, and pepper.
Marinate chicken for minimum 4 hours, ideally overnight.
Thread onto skewers, leaving small gaps between pieces.
Grill over high heat for 4-5 minutes per side until charred and cooked through (74C internal).
Let rest 3 minutes off the grill.
Serve in warm pita with garlic sauce, pickles, fries, and fresh vegetables.
