Season lamb with paprika, cumin, garlic, salt, and pepper. Grill or roast until cooked, then slice very thinly.
Warm tomato sauce with a pinch of sugar and red pepper flakes.
Cut pide bread into squares and toast lightly.
Arrange bread on a warm plate, layer sliced meat on top.
Pour hot tomato sauce over the meat and bread.
Add a generous dollop of yogurt on the side.
Brown butter in a small pan until nutty and foaming, pour sizzling over everything. Serve immediately.
