Make dough: mix flour, egg, warm water, and salt until smooth. Knead 5 minutes, wrap, and rest 30 minutes.
Boil and mash potatoes until smooth. Season with salt and pepper.
Dice onions and fry half in butter until deeply golden. Mix into the mashed potatoes.
Roll dough thin, cut 8cm circles, and fill each with a spoonful of potato filling.
Fold in half and pinch edges firmly to seal, crimping with a fork if desired.
Boil in salted water until they float, about 4 minutes.
Fry remaining onions in butter until caramelized. Toss boiled varenyky in the onion butter and serve with sour cream and crispy onions.
