Finely chop or pulse tomatoes, peppers, onion, and parsley in a food processor.
Mix with ground lamb, red pepper paste, paprika, cumin, salt, and pepper.
Roll dough into very thin rounds, as thin as possible — almost translucent at edges.
Spread a thin layer of meat mixture to the edges of each round.
Bake on a preheated pizza stone at 260C for 5-6 minutes until edges are crispy.
Squeeze fresh lemon juice over the top, add parsley and sumac.
Roll up and eat by hand — the classic Turkish street food way.
