Mix flour, pinch of salt, sugar, and enough warm water to make a soft, elastic dough.
Knead for 10 minutes until very smooth. Rest 1 hour.
Stretch dough on an oiled surface as thin as possible — you should almost see through it.
Brush generously with melted butter and oil mixture.
Fold edges toward center repeatedly, creating layers. Let rest, then stretch and fold again 3 times.
Shape into a round, place in a buttered pan.
Bake at 200C for 25 minutes until puffed and golden. Serve drizzled with honey or stuffed with cheese.
