Paella Valenciana

The original paella from Valencia made with rabbit, chicken, green beans, white beans, and saffron-infused rice cooked in a wide shallow pan over an open flame. The prized socarrat -- the crispy rice crust at the bottom -- is the mark of a perfect paella.
