Peel and boil potatoes until very soft, about 25 minutes
Drain and mash with butter and warm milk until completely smooth
Let the mixture cool slightly, then beat in eggs and flour
Season with nutmeg and salt
Pour into a buttered baking dish and smooth the surface
Sprinkle with breadcrumbs and dot with extra butter
Bake at 175C (350F) for 45 minutes until golden brown on top
Serve warm as part of a Finnish holiday meal or alongside sausages
Storage Instructions
Refrigerate up to 4 days. Freezes for 2 months though texture may become slightly grainy. Reheat in oven at 175C covered with foil.
