
Nepal's beloved steamed dumplings filled with spiced buffalo or chicken and served with a fiery tomato-sesame achar that is absolutely addictive.

Make dough from flour, water, and salt. Knead until smooth, rest 20 minutes.
Mix ground chicken with finely diced onion, minced garlic, ginger, coriander, cumin, turmeric, oil, and salt.
Roll dough thin and cut into rounds. Place filling in center, pleat edges to seal into crescent or round shapes.
Steam momos for 12-15 minutes until dough is translucent.
For achar: roast tomatoes and blend with toasted sesame seeds, timur pepper, garlic, chili, and salt.
Serve steamed momos hot with the tomato-sesame achar.
For jhol momo variation, serve in a spiced sesame-tomato broth.
