
Steamed Nigerian bean pudding made from blended black-eyed peas with peppers, onions, and egg — protein-rich and velvety.

Soak black-eyed peas for 4 hours, then rub skins off and rinse clean.
Blend soaked peas with bell pepper, scotch bonnet, and onion until very smooth, adding minimal water.
Stir in palm oil, crayfish, salt, and bouillon. The batter should be thick but pourable.
Grease ramekins or wrap portions in banana leaves or foil.
Place a boiled egg in each portion and pour batter around it.
Steam in a pot with water (reaching halfway up the molds) for 45 minutes until set.
Let cool 10 minutes before unmolding. Serve warm as a side or main dish.
