Cut beef into 2cm cubes and season with salt and black pepper.
Heat niter kibbeh in a large skillet over high heat until smoking.
Sear beef in batches for 2 minutes per side until browned but still pink inside. Set aside.
In the same pan, saute sliced onions, jalapenos, and garlic for 3 minutes.
Add diced tomatoes and rosemary, cook 2 minutes.
Return beef to pan, toss everything together for 1 minute.
Serve immediately over injera or with rice.
