Dice cooked potatoes and leftover meat into 1.5 cm cubes
Dice the onion to a similar size
Melt butter in a large skillet over medium-high heat
Fry potatoes until golden and crispy on the edges, about 10 minutes, stirring occasionally
Add meat and onion, continue frying for another 5 minutes
Season with salt and pepper, tossing everything together
Fry eggs sunny-side up in a separate pan
Serve the hash topped with a fried egg, pickled beetroot, and ketchup on the side
