Pound or blend garlic, shallots, chili, and shrimp paste into a coarse paste.
Heat oil in a wok over very high heat. Stir-fry the paste until fragrant, about 1 minute.
Add diced chicken, cook until just done, about 3 minutes.
Add cold cooked rice, breaking up any clumps. Stir-fry vigorously for 3 minutes.
Add kecap manis and toss until rice is evenly coated and slightly caramelized.
Fry eggs sunny-side up in a separate pan.
Serve each plate of nasi goreng topped with a fried egg, crispy shallots, sliced cucumber, and prawn crackers.
