Boil milk in a heavy pot, stirring frequently. Reduce to about 750ml.
In a separate pan, heat sugar over medium heat until it melts and turns a deep amber caramel.
Carefully pour the hot reduced milk into the caramel, stirring constantly. The mixture will bubble vigorously.
Stir until all caramel is dissolved and the milk is a uniform golden color.
Let the mixture cool to lukewarm — it should be warm to the touch but not hot.
Stir in the yogurt starter and crushed cardamom. Pour into clay pots.
Cover and set in a warm place for 8-10 hours until firm. Refrigerate and serve chilled.
