
A Dutch-Burgher heritage dish of rice cooked in stock, wrapped in banana leaf with frikkadels, ash plantain curry, and blachan, then baked.

Cook rice in meat stock with cinnamon, cardamom, and cloves until fragrant and fluffy.
Make frikkadels: mix ground beef with onion, spices, and egg. Shape into small balls and fry until golden.
Prepare ash plantain curry by simmering sliced plantain in coconut milk with curry powder.
Make blachan by frying shrimp paste with onion and chili until dark and aromatic.
Hard-boil eggs and halve.
Soften banana leaves over an open flame. Place a portion of rice in the center, top with frikkadels, plantain curry, blachan, and egg.
Wrap into neat parcels and bake at 180C for 20 minutes. Serve in the banana leaf.
