Shred the godamba roti into thin strips with your hands.
Cook chicken pieces with curry powder until done, then shred or chop finely.
Heat a flat griddle or large pan over very high heat.
Add oil, curry leaves, and green chilies. Stir 30 seconds.
Add sliced leeks, shredded cabbage, and julienned carrots. Stir-fry 2 minutes.
Add shredded roti and chicken. Using two metal scrapers, chop and toss everything together vigorously.
Push to one side, scramble eggs, then mix everything together with soy sauce. Serve immediately.
