
Iconic Finnish Christmas star pastries made from puff pastry with prune jam filling at the center, dusted with powdered sugar like fresh snow.

Roll out puff pastry on a lightly floured surface and cut into 10cm squares.
Cut slits from each corner toward the center, stopping about 2cm from the middle.
Place a teaspoon of prune jam in the center of each square.
Fold every other corner point into the center, pressing firmly to seal and create a pinwheel star shape.
Beat the egg with water and brush each pastry lightly for a golden finish.
Place on a parchment-lined baking sheet and bake at 220C for 10-12 minutes until puffed and deeply golden.
Let cool on a wire rack for 5 minutes.
Dust generously with powdered sugar and serve with coffee or glogi (mulled wine).

Store at room temperature for 2 days in an airtight container. Best served fresh the same day for maximum puff. Freeze unbaked assembled pastries for 1 month and bake from frozen.
