
Ukrainian stuffed cabbage rolls filled with rice and pork in a garlicky tomato sauce — a Sunday dinner staple in every Ukrainian home.

Core cabbage and blanch in boiling water until leaves are pliable, about 5 minutes. Separate leaves.
Cook rice until half-done. Saute grated carrots and diced onion until soft.
Mix ground pork with par-cooked rice, half the sauteed vegetables, minced garlic, salt, and pepper.
Trim thick ribs from cabbage leaves. Place filling at the base, fold sides in, and roll tightly.
Layer bottom of pot with any broken cabbage leaves. Arrange rolls seam-side down.
Mix tomato sauce with remaining vegetables and sour cream. Pour over the rolls.
Cover and simmer on low heat for 1.5 hours, or bake covered at 175C. Serve with extra sour cream.
