Make the sauce: simmer beer, tomato sauce, beef broth, piri piri, bay leaf, and a splash of brandy for 20 minutes until slightly thickened. Blend smooth.
Pan-fry steaks until medium, slice linguica.
Build sandwiches: bread, ham, steak, linguica, ham, bread.
Place each sandwich in an oven-safe dish, cover entirely with cheese slices.
Bake at 200C for 10 minutes until cheese is melted and bubbling.
Ladle generous amounts of hot sauce over and around the sandwiches.
Serve immediately with fries on the side, letting them soak up the sauce.
