Soak flat rice noodles in warm water until pliable if dried. Drain well.
Heat a wok over the highest heat until smoking. Add oil and swirl.
Add garlic and chili paste, stir 10 seconds.
Add sliced Chinese sausage and prawns, stir-fry 2 minutes until prawns are pink.
Push ingredients to one side, crack eggs into the wok and scramble roughly.
Add noodles, dark soy sauce, and light soy sauce. Toss vigorously for 2 minutes.
Add bean sprouts and chives, toss for 30 seconds. Serve immediately while smoky.
