Season chicken thighs with salt and pepper. Sear in butter over high heat until golden on all sides. Remove.
In the same pot, add sliced onions and cook until soft, about 8 minutes.
Add minced garlic, cook 1 minute.
Add diced tomatoes, return chicken to the pot. Cover and simmer 30 minutes.
Uncover, add red wine vinegar and dried marigold. Cook 10 more minutes until sauce thickens.
Stir in generous amounts of chopped fresh coriander and basil right before serving.
Serve in a deep dish with the herbed tomato sauce and crusty Georgian bread.
