A rich, sweet-tart Middle Eastern drink made from tamarind pulp and dates, popular across Iraq, Iran, and the Gulf states.

Soak tamarind paste in 200ml warm water for 30 minutes.
Pit dates and soak in remaining water.
Press tamarind through a fine sieve to remove seeds and fibers.
Blend dates with their soaking water until smooth.
Combine tamarind water with date mixture, add sugar and rose water.
Serve very cold over ice, this is a beloved Ramadan refreshment.
