Bring 8 cups of water to a boil. Add pork ribs and quartered onion, simmer 30 minutes, skimming scum.
Add quartered tomatoes and sliced radish, cook 10 minutes.
Stir in tamarind paste and fish sauce, adjusting sourness to taste.
Add eggplant and string beans, cook 5 minutes until tender.
Add kangkong leaves, cook 1 minute until just wilted.
Serve hot with steamed rice on the side.
