
Colombia's hearty one-pot stew of chicken, yuca, plantain, corn, and potatoes in a rich broth — the ultimate family Sunday gathering dish.

Place chicken in a large pot with water, scallions, garlic, cilantro stems, and salt. Bring to a boil, then simmer.
Peel and cut yuca into chunks, slice plantains into thick rounds, cut corn into pieces, and dice potatoes.
After chicken has simmered 20 minutes, add yuca and corn (they take longest to cook).
Add potatoes and plantain 15 minutes later.
Simmer until all vegetables are tender and the broth is rich, about 30 more minutes.
Season with salt and add chopped cilantro.
Serve in large bowls with white rice on the side and aji picante for heat. Every Colombian family has their own version.
