
A Pashtun specialty of spiced minced beef patties studded with tomatoes, pomegranate seeds, and coriander, pan-fried until crispy.

Equipment needed

Coarsely crush cumin and coriander seeds — do not grind fine.
Finely dice one tomato and slice the other into rounds.
Mix minced beef with diced tomato, diced onion, chopped green chilies, coriander leaves, pomegranate seeds, crushed spices, egg, and corn flour.
Shape into large flat patties about 1 cm thick.
Press tomato rounds into one side of each patty.
Heat beef tallow in a pan and fry patties, tomato-side down first, until deeply crispy — about 4 minutes per side.
Serve hot with naan, raita, and sliced onion.
