West Africa's most popular drink, a sweet, tangy hibiscus juice spiced with mint and vanilla, served at every celebration from Dakar to Abidjan.

Bring water to a boil and add dried hibiscus flowers and mint.
Simmer for 15 minutes until deeply red and fragrant.
Strain through a fine sieve, pressing flowers to extract all liquid.
Stir in sugar while the liquid is still warm until dissolved.
Add vanilla and orange blossom water.
Chill thoroughly and serve over ice, this is Senegal's pride.
